The fact that the M1 Macs can’t output to more than one external monitor without the use of workarounds such as DisplayPort or sidecar on the iPad is well known at this point. Apple themselves disclose this on the tech spec sheet of all the M1 Macs.

This right here is the #1 fatal flaw. The fact that you can't support two apple thunderbolt displays out of the box should have been a red flag.
To say we can only do "one" is pretty messed up considering the Iris graphics which uses system memory has been used for a decade plus.
To me this is a no-go, I could even rationalize it on the new macbook air or pros 1st generation, but on a mac mini? Wow just wow.
